Cake Ingredients:
2 c sugar
1 3/4 c flour
3/4 c cocoa
1 1/2 tsp baking soda
1 1/2 tsp baking powder
1 c boiling water
1 tsp salt
2 eggs
1 c melted chocolate ice cream
1/2 c vegetable oil
2 tsp vanilla
Directions:
Heat oven to 350 degrees. Prepare 13 x 9 pan with cooking spray. Combine dry ingredients in large bowl. Add eggs, melted ice cream, oil and vanilla; beat on medium speed for 2 minutes. Stir in boiling water. Batter will be thin. Pout into pan and bake 30 – 35 minutes. Cool completely before icing.
Frosting Ingredients:
1/3 c softened butter
1/3 c peanut butter
1 1/2 tsp vanilla
2 1/2 c confectioner’s sugar
1/3 c cocoa
1/4 tsp salt
4 – 5 tbsp milk
In a large bowl, cream butter and peanut butter until light and fluffy. Beat in vanilla. Stir in confectioner’s sugar, cocoa, salt and enough milk to achieve spreading consistency. Spread over top of cake.
