Ingredients:
4 oz unsweetened chocolate, chopped
1/2 c shortening
3 eggs, lightly beaten
2 c granulated sugar
2 tsp baking powder
2 tsp vanilla
1/4 tsp salt
2 c all purpose flour
2/3 c powdered sugar
Directions:
In a small saucepan cook and stir chocolate and shortening over low heat until chocolate melts. Cool for 15 minutes.
In a large bowl combine the eggs, sugar, baking powder, vanilla and salt. Stir in chocolate mixture. Gradually stir in flour until thoroughly combined. Cover and chill dough about 2 hours or until easy to handle.
Preheat oven to 375 degrees. Lightly grease a cookie sheet. Shape dough into 1 inch balls. Roll balls in powdered sugar to generously coat. Place balls 2 inches apart on the prepared cookie sheet. Bake about 10 minutes or until edges are just set. Transfer cookies to a wire rack and let cool
Makes 60 cookies.
