Makes about 18
Ingredients:
1 (18.4-ounce) box brownie mix
2 large eggs
1/2 cup vegetable oil
1/4 cup water
1 (10-ounce) package shortbread cookies
5 ounces cream cheese, softened
1/2 cup sugar
1 (11-ounce) package soft caramels
2 tablespoons whole milk
3 (4-ounce) bars semisweet chocolate, chopped
2 tablespoons unsalted butter
1 (8.7-ounce) package Twix Unwrapped Bites candy bars, chopped
- Preheat oven to 350 degrees. Spray a 13×9-inch baking dish with baking spray with flour. Line pan with parchment paper, letting excess extend over sides of pan.
- In a large bowl, stir together brownie mix, eggs, oil, and 1/4 cup water until well combined. Spread batter into prepared pan.
- Bake until just set, 15-20 minutes. Let cool completely. Position oven rack in top third of oven; leave oven on.
- In the work bowl of a food processor, pulse together shortbread cookies, cream cheese , and sugar until well combined. Press mixture on top of cooled brownie layer. Bake for 8 minutes.
- Meanwhile, in a medium saucepan, cook caramels and milk over medium-low heat, stirring frequently, until melted and smooth. Spread onto cookie layer. Freeze until caramel is set, about 30 minutes.
- In a small saucepan, cook chocolate and butter over low heat, stirring constantly, until melted and smooth. Spread chocolate onto caramel layer; to with chopped Twix bars. Refrigerate until chocolate is set, about 30 minutes. Using excess parchment as handles, remove from pan before cutting into bars.
